If the environment is already setup, then I would suggest looking at a host-based volume manager as it is able to encapsulate the current storage and then you are free to create as many snapshots as you would like. This is probably the simplest way to do what you are looking to do.
The volume replication option will allow you to mirror the local volumes to another host in the environment, it is an add-on to the volume manager.
You could also look at some of the host-based virtualization engines from DataCore and FalconStor which provide this capability as well. Or, as a final option, you can migrate your storage to an environment that supports snapshots on the storage device itself, such as Network Appliance FAS storage systems.
