What is the best solution to backing up a SAN of 6TB or more? Should I be thinking of everything being backed up within a timed window or use more and more incrementals? It's a nightmare trying to figure out which way to turn.

You have to do everything in pieces and work in parallel. The issue is the size of the largest file system (or database) in the SAN.
I recommend a LAN free backup system. Even so, there is a lot of detail to cover. You probably should hire a good backup consultant to tune your backup operations.
